2025 Béton
Béton—French for “concrete”—is both a nod to tradition and a reflection of our continued curiosity in the cellar. This Rhône-inspired white blend brings together 45% Viognier, 45% Roussanne, and 10% Marsanne, sourced from the sun-drenched slopes of the Horse Heaven Hills AVA. Known for its warm days, cooling winds, and mineral-driven soils, this site allows these classic Rhône varieties to develop both vibrant aromatics and natural structure.
In partnership with our winemaking consultant, Ray McKee of Trothe, we chose to ferment and age this wine entirely in concrete. Unlike oak, concrete is neutral in flavor, allowing the purity of the fruit and vineyard to shine. At the same time, its porous nature encourages gentle oxygen exchange, building a soft, rounded texture and layered complexity. The result is a wine that beautifully balances freshness and richness—expressive aromatics of stone fruit and white flowers give way to a silky, weighty palate and a long, mineral-driven finish.
Béton is a limited exploration of both place and process—an intersection of Old World inspiration and Yakima Valley fruit, crafted to be enjoyed at the table and shared in good company.
